Pam Brunton will be joined by Don Sloan, to discuss her acclaimed book, Between Two Waters. She will reflect on Scottish cuisine - how it has evolved and been shaped by colonialism, capitalism and gender. Pam will also look to the future and consider how progressive Scottish cuisine might consciously represent our modern, diverse nation.
PAM BRUNTON is chef proprietor of the acclaimed Inver restaurant by Loch Fyne, which holds a Green Michelin Star. She published her first book, _Between Two Waters_, in 2024. She holds a masters in Food Policy from City, University of London.
DONALD SLOAN is the founder and Chair of the Oxford Cultural Collective, which works to unlock the regenerative potential of food, drink and hospitality. Much of his work is focused on ethical food system transition.
